Question: Is it possible to disable sorting options which appears as a HTML list of options, such as "date asc", "date desc" etc.?

Answer: You can find that option in your menu parameters.

For Table - Content Categorie or Table - Content Section you can find the following parameter:
Order Select:     Hide Show

Set it to hide to hide it, and to show to display it.
